The preparation of Sabjhi evolved from India’s ancient Ayurvedic principles, which emphasize the importance of balanced, vegetable-based meals. According to Ayurvedic texts dating back over 3,000 years, different combinations of vegetables and spices were used not just for flavor, but for their medicinal and nutritional properties.
