ORIGINS OF TANDOORI FISH

Tandoori Fish represents the beautiful fusion of India’s ancient tandoori cooking traditions with its rich coastal culinary heritage. While tandoori cooking originated in the northern regions of India, particularly Punjab, the technique found its way to coastal areas where it was brilliantly adapted for seafood preparation.

The use of tandoors for cooking dates back thousands of years in India, but the application of this technique to fish emerged as coastal communities began experimenting with different ways to prepare their abundant seafood. The marriage of tandoori spices with fish proved to be particularly successful, as the high heat of the tandoor could seal in the fish’s natural moisture while imparting a distinctive smoky flavor.

Each coastal region of India developed its own unique approach to tandoori fish. In Bengal, where fish is a staple, the marinades tend to be more subtle to complement the delicate freshwater fish. The western coastal regions, particularly in Gujarat and Maharashtra, developed spicier variations, while Kerala in the south incorporated coconut and curry leaves into their marinades.

Today, at Shandhar Hut, we honor both the coastal influences and tandoori traditions in our preparation of tandoori fish, offering our guests a dish that brings together the best of India’s diverse culinary heritage. Our use of basa fish continues this tradition of innovation while maintaining the authentic flavors and techniques that make tandoori cooking so special.

HOW WE DO IT

It is our mission to become Chilliwack’s premier destination for authentic Indian cuisine, and we believe the secret to our exceptional Tandoori Fish lies in our commitment to quality seafood and traditional tandoori techniques. We start with premium basa fillets, carefully selected for their delicate flavor and firm texture that holds up perfectly to tandoori cooking. The foundation of our marinade begins with thick, creamy yogurt, which helps tenderize the fish while keeping it moist throughout the cooking process. Our signature spice blend is a carefully guarded recipe, featuring the warmth of carom seeds, the brightness of turmeric, and the subtle heat of Kashmiri chili. Fresh ginger and garlic paste add a potent aroma and depth, while lemon juice brings a zesty freshness to the dish. We also incorporate mustard oil and fenugreek leaves for their unique flavors that particularly complement seafood. The marinade is gently applied to each fillet and allowed to infuse for just the right amount of time, ensuring the delicate fish absorbs the flavors without becoming overwhelmed. The fish is then carefully brushed with clarified butter and expertly cooked in our traditional tandoor, which imparts a subtle smokiness while maintaining the fish’s natural moisture. The cooking time and temperature are precisely controlled to ensure each fillet is perfectly done – flaky and tender without being dry. The result is a dish that’s delicately spiced, perfectly cooked, and wonderfully aromatic – a true representation of Indian coastal cuisine and a testament to our commitment to culinary excellence here at Shandhar Hut.
