A Brief History of Tandoori Chicken
Tandoori Chicken, now beloved worldwide, has its roots in the innovative spirit of 1920s Punjab. The dish was created by Kundan Lal Gujral, a restaurateur in Peshawar (now in Pakistan), who sought a way to prevent leftover chicken from drying out. His ingenious solution was to marinate the chicken in yogurt and spices before cooking it in a tandoor, a traditional clay oven. This method not only preserved the chicken’s moisture but also imparted a unique smoky flavor and vibrant color. The dish quickly gained popularity in Peshawar and, following the partition of India in 1947, spread throughout the subcontinent as Gujral relocated to Delhi. As people from the Punjab region migrated across India and beyond, Tandoori Chicken found its way onto menus around the globe, evolving slightly with each new location but always maintaining its core characteristics. Our Tandoor Secret
At Shandhar Hut, we believe the secret to exceptional Tandoori Chicken lies in quality ingredients and the perfect blend of spices. We start with tender, locally-sourced chicken and creamy yogurt, which helps tenderize the meat and infuse it with flavor. Our signature spice mix includes Kashmiri red chili powder for heat and color, turmeric for its earthy flavor, garam masala for warmth, fresh ginger and garlic for pungent notes, and lemon juice for brightness. We also incorporate traditional spices like cumin, coriander, and fenugreek to create a complex, well-rounded flavor profile. Each spice is carefully measured and mixed to ensure consistency in every batch, delivering the authentic taste our customers have come to love. The marinade is applied generously and left to work its magic for a full 24 hours, allowing the flavors to penetrate deep into the meat. Just before cooking, we baste the chicken with a mixture of ghee and honey, which helps create those irresistible char marks and adds a subtle sweetness that balances the spices perfectly. The result is a dish that’s rich in flavor, succulent in texture, and truly representative of the best in Punjabi cuisine.
